Date Night For Less Than £10

One of the most over used excuses for not eating heathily is expense. Whilst I fully appreciate that it is harder to eat healthily on a budget it's still absolutely doable! Here I've done the work for you by designing a three course meal- for two for less than £10. All prices are based on Tesco prices. Please be aware than I am assuming you have the basics - oil, salt, pepper, cinnamon and honey.

Starter:

Stuffed Peppers
2x red peppers = £1.10
drizzle of olive oil
bulgar wheat and quinoa mix =£2.00
nightingale farms cherry tomatoes = £0.53
pinch of salt
pinch of pepper
sprinkle of Italian seasoning= £0.70
1x can black beans = £0.50

Method: 
1. Cook the bulgar wheat and quinoa mix as per cooking instructions on the pack. You will need this for the main course too.
2. Preheat the oven to 180C. 
3. Slice the peppers straight down the middle and de-seed them . Drizzle with oil, salt and pepper.
4. Place in the oven for 20 minutes. 
5. In a bowl combine 50g of the bulgar wheat mix, sliced tomatoes (6), black beans, salt, pepper and a pinch of italian seasoning. 
6. Remove the peppers from the oven and stuff them with the mix. Bake for a further 30 minutes for soft peppers. 

Main:

Grilled chicken on a bed of quinoa, bulgar wheat and veggies. 

Willow Farms chicken breast portions (serves 2) £1.89
Remainder of the bulgar wheat and quinoa mix. 
1x lemon = £0.35
1x cauliflower = £1.00
1x broccoli = £0.55
salt
pepper
olive oil
Italian seasoning

Method: 
1. Preheat the oven to 180C. 
2. Chop the broccoli and cauliflower into small chunks. Place on a lined baking tray, drizzle with oilve oil, salt, pepper and italian seasoning. Bake for 30-40 minutes until chargrilled.
3. Place the chicken breasts on a separate lined tray, drizzle with oilve oil, salt, pepper, italian seasoning and juice of half the lemon. Bake for 20-25 minutes. 
4. Heat through the quinoa and bulgar mix and add the juice of half the lemon, salt and pepper. 
5. Once roasted and crispy add the cauliflower and broccoli to the bulgar wheat and quinoa mix. Pour out onto a plate. Slice the chicken and layer on top of the quinoa and veggie mix. Serve. 

Dessert: 
Baked apples

2x tesco braeburn apples = £0.70
sprinkle of cinnamon
drizzle of honey
1x berry seed shot = £0.50

Method:
1. Preheat the oven to 180C. 
2. Core the apples and slice them in half length ways. 
3. Sprinkle with cinnamon, honey and bake for 10-12 minutes.
4. Remove from the oven and top with the berry seed mix. Return to the oven for a further 5-8 minutes.
5. Serve and enjoy!
