Caribbean Banana Fritters

Also known as deliciously indulgent banana pancakes! Best served with coconut yoghurt or dairy alternative.

3 bananas
1 egg
1tsp vanilla extract
1/2tsp cinnamon
1/4tsp nutmeg
100g coconut sugar
150g buckwheat flour
1tbsp baking powder
Dairy free milk 200ml
1 tbsp almond yoghurt (or dairy alternative)
Coconut oil for cooking.


1. Mash the bananas.
2. Place all the ingredients in a blender and blend until thick and smooth.
3. Heat the coconut oil in a pan and then pour the mix into the pan to make pancakes.
4. Cook for 1-2 minutes before flipping for a further 30 seconds to 1 minute.
5. Repeat until you have a full stack!
