Christmas Pudding Recipe

This Christmas pudding recipe is a healthy twist on an old classic. When baked it comes out more of a loaf however, when steamed it's much softer and more pudding like. Both are delicious.

1 apple
1 carrot
500g dried mixed fruit (soaked for 30 minutes)
3 eggs
3tsp ground cinnamon
2tsp mixed spice
Dash of cloves
Zest of 1 orange


1. Preheat the oven to 180°C.
2. Grate the carrots and apple. 
3. Drain the fruit and add them to a bowl with the carrot, apple, eggs, cinnamon, mixed spice, cloves and orange zest. Mix until well combined.
4. Pour the mix into a lined loaf tin and bake in the oven for 45 minutes OR steam for around 1 hour 15 minutes but keep an eye on it. Allow to cool. The loaf should be soft in the middle.
