Frozen Berries and Cashew Cream

 

This is my take on the Ivy's signature dessert. It's the perfect light and refreshing summer dessert and it takes minutes to make. 

 

   Ingredients:   1 Cup mixed frozen berries 150g cashews (soaked for 6+ hours) Juice of 1 1/2 oranges 1/2 tsp vanilla essence honey to taste (optional)  Method:  1. Soak the cashews for at least 6 hours.  2.. Blend the cashews orange juice, vanilla and honey (if you're using it) together until smooth.  3. Pour over the berries and enjoy.
