Honey cake is always a winner. The orange addition to this recipe makes it the perfect autumnal recipe.
1 3/4 cups ground almonds 1/2 tsp bicarbonate of soda 1 tsp cinnamon 1/2 tsp mixed spice Zest of 1 orange Juice of 1 orange 1/2 cup honey 3 eggs 1tbsp softened coconut oil
1. Preheat the oven to 160C. 2. Combine all the dry ingredients in one bowl and all the wet ingredients in another. 3. Slowly pour the wet into dry whilst mixing. Mix thoroughly and pour into a lined loaf tin. 4. Bake for 35-40 minutes. 5. Leave to cool before slicing. 6. Best served once left for a day to sit.
