Mince Pie Muffins
 

I love this recipe as it doubles up with my mince pie recipe meaning you get two for the price of one!

It is so unbelievably simple and as there is no added sweetener it makes a perfect festive breakfast on-the-go. 

Ingredients:   Leftover mince filling 150g ground almonds  2 eggs  1 tsp cinnamon 1 tsp mixed spice 1/2 tsp baking powder 1/2 tsp vanilla powder  Method:  Pre-heat the oven to 180 °c.  Combine the mince and the eggs well.  In a separate bowl combine the ground almonds, cinnamon, mixed spice, baking powder and vanilla powder. Pour the dry ingredients into the wet ingredients and ensure well mixed.  Line a muffin tin with muffin cases and pour the mix into the cases.  Bake for 30 minutes. Then turn the oven off and leave the muffins inside the oven to cool.
