Pre-heat the oven to 180°c. Combine the mince and the eggs well. In a separate bowl combine the ground almonds, cinnamon, mixed spice, baking powder and vanilla powder. Pour the dry ingredients into the wet ingredients and ensure well mixed. Line a muffin tin with muffin cases and pour the mix into the cases. Bake for 30 minutes. Then turn the oven off and leave the muffins inside the oven to cool.
