Nut Free Nut Roast

I know what you’re thinking what is a nut-free nut roast! This is the perfect recipe for a nut-free plant based guest at your Christmas table.

Ingredients:
1 tbsp coconut oil
1 white onion (diced)
3 cloves of garlic (minced)
4 mushrooms finely (cubed)
1 carrot (grated)
400g tin of kidney beans
400 g tin of red lentils
1 tbsp tamari or soy sauce
2 tbsp mixed dried herbs
4 tbsp nutritional yeast
Black pepper to taste
Salt to taste
120g quinoa flakes

Method:
1. Preheat the oven to 180C.
2. Heat the oil in the pan and add the onion and garlic. Allow to sweat for 3-4 minutes.
3. Next add the mushrooms, carrots, kidney beans, lentils, tamari, herbs, nutrtional yeast, salt and pepper allow to cook for 6-7 minutes.
4. Add a splash of water until the mix holds when you press it down.
5. Pour the mix into a lined tin and bake in the oven for 40 minutes.
6. Allow to cool before serving.
