Raspberry and Vanilla Beauty Balls

 

Sometimes we all want to eat something that looks stunningly delicious. These beauties are the answer. They're packed with protein, healthy fats and fibre and they're beyond simple to make. 

Here goes: 

Ingredients:  1 cup almonds  1 cup medjool dates 1 tsp vanilla essence  1 tbsp raspberry powder   optional for rolling: freeze dried raspberries, additional raspberry powder.   Method: 1. Place the almonds into the food processor and blitz until slightly broken down. 2. Add in the dates, vanilla and raspberry powder and blend until well combined and a dough texture is formed. If your dates are not sticky enough you may need to add in a few more.  3. Remove the dough from the food processor and roll into balls. Further roll in freeze dried raspberries or raspberry powder.  4. Store in the fridge until ready to eat.
