Raw Courgetti Pesto
I'm often asked for recipes for vegans. The natural response to finding out you have a vegan coming for dinner often provokes panic in people. However, panic no more. This recipe is super easy, really effective and absolutely delicious.
1 large handful of basil
1 tbsp olive oil
1 handful of cashew nuts
2 cloves of garlic (peeled and chopped)
2tbsp Nush Almond yoghurt (or dairy Greek yoghurt)
Pinch of salt and pepper
1. Spiralize the courgettes (or grate if you don’t have a spiralizer).
2. Add the basil, cashew nuts, olive oil, garlic, yoghurt, salt and pepper to a food processor and blitz until smooth. You may need to add an extra spoonful of yoghurt if your mix is lumpy.
3. Pour the pesto over the courgetti. Mix fully until all of the courgette is coated.
4. Serve and enjoy!
