Chocolate Orange Millionaire Shortbread

These will forever remind me of my childhood. Every saturday morning after diving into a fully loaded bagel (or two) we'd always sit round and share a box of Millionaires... How things have changed! I'm not sure my younger self who lived for sugar would quite believe the 360 she's done... But anyway let's save that for another day. Here I have the recipe for you to recreate a healthier version at home.

  • For the base:
    150g ground almonds
    zest of one orange
    4 tbsp honey
    pinch of salt

    For the caramel:
    15 medjool dates (pitted)
Juice and zest of one orange
    pinch of salt

    For the chocolate:
    50g cacao butter
    3 tbsp cacao powder
    3 tbsp maple syrup
    pinch of salt

1. In a food processor combine all the ingredients for the base until a dough like texture is formed. Press the base into a lined brownie tin. Ensure the base is evenly spread. Place the tin into the freezer whilst you work on the caramel.
2. Pit the dates and place all the ingredients for the caramel into the food processor, blitz until a caramel texture is formed. Remove the tin from the freezer and evenly press the caramel on top of the base. Return the tin to the freezer whilst you make the chocolate.
3. Place the cacao butter in a saucepan over a low heat to melt (watch to ensure it doesnt burn). Once melted add the cacao powder, maple syrup and salt and continue to heat until combined and thickened.
4. Remove the tin from the freezer, pour the chocolate over the caramel and return to the freezer for 4 hours before slicing and serving.
