Tahini and Coconut Energy Balls

 

Energy balls are perfect snack pre or post workout or even to hit that sweet craving. Although so many of the recipes out there (mine included... Until now) are made with nuts. Nuts are a great source of vitamins, minerals, proteins and healthy fats for us all, except those allergic to nuts. For all of you out there I pity so much so I've created you a recipe which is equally delicious and nut free. Enjoy! 

 

Ingredients: 

1 cup pitted medjool dates
1/4 cup desiccated coconut
1 tsp vanilla essence
1 tbsp tahini

Method: 

1. Place the dates in the food processor and blitz.
2. Add the coconut, vanilla and tahini and blend until smooth. 
3. Roll into balls and store in the fridge or the freezer. Keep for no longer than 5 days in the fridge.
